      Josh Dalton opened Veritas in Delaware, Ohio, in 2012 and later moved it downtown. The restaurant remains his tasting-menu kitchen. Speck, a block away, makes fresh pasta and modern Italian dishes. Amara opened on the Scioto Mile in 2026 with hummus, grilled meats, and other Mediterranean dishes made for the table to share.

      Dalton and business partner Mitch Coale also operate The Citizens Trust above Veritas. This index focuses on the three restaurants where Dalton’s food is the main draw.
